September dish of the month: Barbecue
Ah, the South; home of blistering heat, occasionally embarrassing governors and barbecue. And no, I’m not talking about the kind of barbecue with a grill, picnic tables and a “Kiss the Cook” apron, though I suppose the apron could be a universal thing. I’m talking about tender, pulled pork that’s been smoked for a REALLY long time, smothered and covered in sweet, tangy or spicy sauce. Barbecue is a true Southern delicacy, and every one of the many barbecue joints in the Upstate does theirs a little differently. And as I found out when I visited several local barbecue places, they could tell you what’s in the sauce, but you won’t make it out of the dining area alive.
